The mail room, run entirely in-house.
Sending and receiving email reliably is one of those things everyone assumes is easy until they try to do it themselves. Kaito Mail is a whole mail room built from scratch: letters going out arrive where they should, letters coming in are swept for anything nasty, and every message is kept under lock and key while it waits.
It is the unglamorous plumbing that lets the rest of the workshop trust its post.
